Hand cut with knife and vacuum packed. Up to 7,5 kg.
We cut the piece into slices with a knife, preparing interleaved cases of 100 g. or 200 g. as desired, as well as a case with the studs generated from specific areas.
For its correct conservation, it is advisable to keep it cold between 4º and 10º, being advisable to take it out before consumption (at least 30 minutes) to temper it, or to immerse it in warm water for at least two minutes or pass them under warm water, after upon opening, allowing easier separation between the slices without breaking them and recovering their aroma and flavor.
